Steamboat Willie Green Apple Waldorf Salad

Ingredients
¾ cup fat-free Greek yogurt
2 teaspoons Dijon mustard
1 pound chopped cooked chicken
1 cup chopped green-skin apple
1 cup blueberries
1 cup red grapes, halved
1 cup chopped fresh pineapple
½ cup celery cut into chunks
1 tablespoon chopped mint
1 5-ounce package 50/50 salad blend
½ cup chopped pecans or walnuts (optional)
Instructions
(in honor of Mickey Mouse’s 90th anniversary)
- In a medium bowl combine yogurt and mustard. Stir in chicken, apples, blueberries, grapes, pineapple, celery, and mint. Toss to coat evenly.
- Pour salad blend onto a platter. Arrange chicken mixture on salad blend; if desired, sprinkle with pecans or walnuts. Makes 8 servings.
NOTE: Can be served as salad or spooned onto tortillas and rolled up for wraps. Amount of yogurt can be adjusted to personal preference.
