Mixed Berry Whole Wheat Muffins

Ingredients
1¼ cups white whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
⅛ teaspoon salt
1 large egg
½ cup maple syrup
2 teaspoons vanilla
¾ cup plain nonfat Greek yogurt
¾ cup unsweetened applesauce
½ cup chopped strawberries
½ cup blueberries
Instructions
- Preheat oven to 400°F. Grease a muffin tin.
- In a medium bowl whisk flour, baking powder, baking soda, and salt. In a separate large bowl mix egg, maple syrup, vanilla, yogurt, and applesauce.
- Add dry ingredients to wet ingredients and stir until just combined. Do not overmix. Fold in berries.
- Pour batter into prepared muffin tin, filling cups about ¾ full.
- Bake 15 minutes or until tops are golden brown and toothpick inserted in the center comes out clean. Remove from oven and let cool in tin 5 minutes before removing. Makes 12 muffins.
