Oatmeal Cake

Ingredients
Cake
1 cup rolled oats
1 stick butter (½ cup)
1¼ cups boiling water
1 cup granulated sugar
1 cup brown sugar
2 eggs
1½ cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
Topping
6 tablespoons butter softened
½ cup granulated sugar
⅛ cup plus 2 tablespoons milk
1 teaspoon vanilla
1 cup coconut
1 cup chopped walnuts
Frozen whipped topping,thawed, or whipped cream
Instructions
Cake
- Preheat oven to 350°F. For cake, combine oats, butter, and boiling water; let stand for 20 minutes.
- Add white sugar, brown sugar, eggs, flour, baking soda, cinnamon, and salt; mix. Pour into a greased 13×9-inch baking pan.
- Bake 25 to 30 minutes.
Topping
- Mix topping ingredients and spread over baked cake.
- Put cake under broiler until browned and bubbly. Serve with whipped topping.
