Bourbon Butterscotch Filling

In the Kitchen With… September/October 2020
1 stick butter (¼ cup)
1 cup brown sugar
½ cup bourbon
½ cup butterscotch chips
1 cup pecans
2 pinches salt
½ cup half-and-half
2 8- or 9-inch baked cake layers
- In a saucepan melt butter over medium-high; let brown and bubble. Turn heat to low-medium and add other ingredients. Cool completely.
- Spread filling between two cake layers. Use buttercream icing around cake edges to keep the layers together. Makes one two-layer cake. Frost as desired.
