Fruity Pineapple Soup

Ingredients
3 cups fresh pineapple (approximately 1 whole pineapple with core removed)
1 tablespoon lime juice (juice from 1 whole lime)
3 tablespoons peach puree
1 tablespoon lemon juice
3–4 dates, pits removed
1 tablespoon chopped fresh basil
½ cup coconut cream
¼ cup ripe banana
Chopped pineapple, for garnish
Basil leaves, for garnish
Instructions
- Blend all soup ingredients together and chill. Garnish each serving with additional chopped pineapple and a basil leaf. Serve soup cold. Makes 4 servings if using as a dessert. If using as an appetizer or first course, makes 8 servings.
