Italian Chicken Bake

Ingredients
2 medium zucchini
2 medium tomatoes
2 chicken breasts
1 tablespoon minced onion
2 teaspoons Italian seasoning
2 teaspoons smoked paprika
Avocado oil
1–1½ cups shredded mozzarella
1 cup Parmesan cheese
Instructions
- Heat oven to 375°F. Cut zucchini, tomatoes and chicken into bite-sized pieces.
- Stir mixture together and pour into a 9- x 13-inch baking dish.
- Sprinkle with minced onion, Italian seasoning and paprika. Drizzle with avocado oil. Mix well with a spoon.
- Cover with mozzarella and Parmesan. Cover with foil and bake 40 minutes. Makes 6 to 8 servings.
