Cold Palisade Peach Soup

Ingredients
5 Palisade Colorado peaches
¾ cup Greek yogurt
1½ teaspoons vanilla
½ cup crushed ice
½ teaspoon spicy salt (I used
Allspice’s Peruvian pepper salt)
3 tablespoons maple syrup
1½ cups juice or nectar (I used apple, peach, mango juice from Old Orchard)
Mascarpone and berries for garnish
Instructions
- Place all ingredients in a blender and puree on soup setting. Chill and serve. Makes 6 servings. Recipe from Jamie Buelt of Polk City.
